Peppered Beef with Balsamic Vinegar Sauce

INGREDIENTS
- 4 oz. beef tips
- 2 T. olive oil
- 1 tablespoon coarse black pepper
- 1/2 cup julienne onion,
- 1/2 cup julienne red pepper
- 1/2 cup julienne green pepper
- Kosher salt
- 3 tablespoons Balsamic Vinegar
DIRECTIONS
- Heat small saute pan until very hot.
- Toss meat in black pepper, coating evenly.
- Add 2 T. olive oil to hot pan and sear meat, stirring frequently until browned nicely.
- Remove beef from pan and set aside. Add onions and peppers saut? and in same hot pan until tender.
- Add vinegar to pan and bring to a boil, making sure to scrape all of the brown bits on the bottom of the pan.
- Add beef and toss until heated through. Serve over rice or whipped potatoes.
