Peppered Beef with Balsamic Vinegar Sauce

INGREDIENTS

  • 4 oz. beef tips
  • 2 T. olive oil
  • 1 tablespoon coarse black pepper
  • 1/2 cup julienne onion,
  • 1/2 cup julienne red pepper
  • 1/2 cup julienne green pepper
  • Kosher salt
  • 3 tablespoons Balsamic Vinegar

DIRECTIONS

  1. Heat small saute pan until very hot.
  2. Toss meat in black pepper, coating evenly.
  3. Add 2 T. olive oil to hot pan and sear meat, stirring frequently until browned nicely.
  4. Remove beef from pan and set aside. Add onions and peppers saut? and in same hot pan until tender.
  5. Add vinegar to pan and bring to a boil, making sure to scrape all of the brown bits on the bottom of the pan.
  6. Add beef and toss until heated through. Serve over rice or whipped potatoes.
