In the early 1800s, transplanted Acadians adapted their rustic French recipes to native Louisiana shellfish, rice, and more, resulting in the cuisine now known as Cajun. Learn the secrets to its roux, why the “Holy trinity” of celery, onion, and bell pepper is essential, and how to prepare a variety of dishes including Louisiana’s official state dish, gumbo.
