Grapes for our Loft Cabernet Sauvignon were harvested in the cool of the night, and then I put them in a cold soak for 24-hours before starting fermentation to elevate the extraction of color, aromatics and flavor of the wine. Our Cabernet is big and full of structure, with flavors of dense black fruit, currant and spices. It's the perfect wine to pair with a rib eye steak, hearty risotto or rich cheeses.
