Amy's Tamale Verde Cheese

After the birth of our daughter Amy in 1987, we found there was little time to prepare the quality homemade food we normally ate. Realizing there were others like ourselves, we started Amy's Kitchen to prepare delicious meals for those who care about the food they eat but are often too busy to cook. We use only the finest ingredients and prepare them with the same careful attention in our kitchen as you would in your own home. No meat, fish, shellfish, poultry, eggs or peanuts are ever used in any Amy's products. When Amy's family first discovered the Tamale Verde at their favorite restaurant in Puerto Escondido, Mexico, they couldn't believe how good it tasted and kept ordering it over and over again. Amy's dad hoped that we could re-create the recipe for this wonderful Mexican dish and offer it to Amy's customers. That was easier said than done. It took three years to perfect to grow organic tomatillos (which are the heart of the salsa verde) and to make the salsa so that it was just right. All the ingredients are carefully selected and prepared. The organic masa (ground and cooked corn) is poured onto individual parchments, filled with a mixture of Monterey Jack cheese, chiles and jalapenos and then folded and steamed. The tamales are then unwrapped by hand, topped with our delicious verde sauce and served with a side of Spanish rice made from organic brown rice and organic black beans. This delightful tamale dinner is a favorite throughout Mexico and will become a favorite of yours as well.
